Winter Soup

It's that time of year again when a good soup cheers the dark winter days. We've experimented with growing squashes and pumpkins in our garden over the summer. I made our first pumpkin soup with a BBC recipe today, very pleased with the results.

Any favourites out there. Smile

Made lentil celery and carrot today, also used the cooking apples from our tree and made apple and parsnip soup, both lovely.

A really decadent French onion soup, made with loads of onions, caramellised very slowly in some good butter, with really good stock, lardons, a swig of port, a bay leaf or two or more depending on how they smell, a little bit of fresh thyme, and salt and black pepper,.  Served with a hot slice of toast with melted cheese (a good cheddar, or gruyere or raclette cheese, on one side, popped into the top of a nice rustic serving bowl.

But today we had some saggy leeks, and a few leggy potatoes, so we had leek and potato instead.

Mmmmm. These all sound lovely. Soup and a sandwich is my favourite lunch. Today's home made soup is asparagus, such a pretty green (and you can't say that about all soups).

I've only recently started making soups...can't believe how much money I've wasted over the years on supermarket bought soups...probably very high in salt and other additives. Yuck! I've made carrot and coriander, and leek and potato. ValDa...you've just made me hungry with your French onion soup description, so think I'll have to try that!

Its not only the salt in bought soups - they add a lot of sugar too!  Love my soups too - must get back to making some as they are a great filler and help with weight loss.  Garlic and Almond is scrummy.  Nothing like a gorgeous Chicken Soup either.
