Introducing....The Caravan Club sandwich!

Imagine my surprise when I received an email from a friend advising me they had come across a recipe for ‘The Caravan Club Sandwich’. As I’m partial to a sandwich I was intrigued to find out more! The recipe, which see's a different take on the traditional Club Sandwich, has been created by Club member Samantha, who has launched her own recipes website www.samanthas-supper.com. As 2012 is The Club’s celebration of touring year, I thought I would share the recipe with you all. It sounds perfect for picnics or for a lunchtime snack in the caravan.

Ingredients

Serves: 1

  • 3 slices bread
  • 4 slices danish salami
  • 4 slices cucumber
  • good few slices onion
  • seasoning
  • 1 slice mature cheddar cheese
  • 1 tabs low fat mayonnaise
  • 1 tsp mint sauce
  • margarine
  • crisps of your choice to serve

Preparation Method

1. Butter the slices of bread

2. On the first slice add the salami and onion. Add another piece of bread and spread with the mayonnaise and add the mint sauce on top. Spread and mix with a knife

3. Add the cheese and cucumber. Season. Top off with final slice of bread

4. Cut into triangles and serve with crisps on the side
