Hake with Onions and Potatoes ........... Serves 2

I cook this in a saute pan with lid when required. Could use a cadac. Any white fish but I like hake. One pot meal. I serve it in a bowl as I might with a stir-fry

Ingredients

  • 50ml/2fl oz olive oil
  • 1 onions, sliced thinly
  • 2 garlic cloves, sliced
  • 1 tsp paprika
  • 4 or 5 small cherry tomatoes halved
  • 60g pepper, diced)
  • 250g potatoes, cubed
  • 40g mangetout
  • 40ml dry white wine
  • Some water
  • 2 x125g hake steaks or cod
  • freshly ground black pepper
 
 
  • Preparation method

    1. Heat the olive oil in a saute pan.
    2. Add the onions and garlic and cook gently until soft.
    3. Add the paprika and fry for 2-3 minutes, then add the tomatoes and peppers and fry for another 3-4 minutes.
    4. Stir in the potatoes, then pour in the wine and water and simmer for about 20 minutes, until the potatoes are just tender and the liquid has reduced a little.
    5. Season the hake steaks well on both sides with pepper. Put them on top of the potatoes, cover and simmer for 8-10 minutes, until the hake is cooked through. Add mangetout 5 mins from end, serve with some lemon to squeeze
