There was a diversion into breadmaking on the Coronavirus thread and a couple of folk suggested offering some recipes. So here's a starter! smile

Carrot & Fennel Seed Bread 

This will make a medium sized loaf.

 Ingredients - 210 ml water

30 ml sunflower oil

10 ml clear hoNeyland

200 g grated carrot

500 g white bread flour

30 ml skimmed milk powder

2 generous tsp fennel seeds

1.5 tsp salt

1 tsp dried yeast. 

 

To make - pour water, oil and honey into bread pan.  Sprinkle over the grated carrot.

Sprinkle over the flour, making sure it covers the liquid.

Add the milk powder and fennel seeds.

Add the salt in one corner and the yeast in a small indent in the centre of the flour.

Set bread machine on basic setting and off you go.

When finished knock out loaf onto a wire rack to cool.

Eat and enjoy,  perfect with pate or a wedge of cheese!

Anyone tried beer bread? A waste of a good pint I hear some say but apparently it needs only the beer's own 'yeast' and is delicious. Lots of recipes on the Internet!

When I was lad in Cornwall mother use to make Saffron buns, we loved them with lashings of butter. I tried this recipe I found in an attempt to make a loaf in our Breadmaker, and it turned out quite well considering.

The Ingredients
1 cup milk
⅛ teaspoon ground saffron 
1 tablespoon butter, softened
2 eggs
⅓ cup sugar
3¼ cups flour
1 teaspoon salt
1 package bread maker yeast
¾ cup raisins


The basic instructions
Add all ingredients, except raisins, to the bread maker pan in the order listed. 
Set bread maker to the regular setting and start. Add the raisins when the beeper sounds to add additional ingredients.

Just for once I've got some saffron in the store cupboard, I love saffron loaves and buns!

This makes a light wholemeal loaf, if you like it heavier, add more wholemeal and less white flour.

Add in this order......

1 tsp dried yeast 

230g strong wholemeal flour

245g strong white flour

1tsp sugar

1tsp salt

25g rapeseed oil

325ml water

bake as large wholemeal loaf

(we have a Panasonic breadmaker, takes 5 hours)

knock out as soon as possible and wrap in a tea towel and place on a grid to cool.

best left to stand at least 12 hours before slicing, 24 hours even better.

will keep in fridge for a week at least.

Who knows what's coming? Assuming you can get everything 😂 indulge yourself.
