Wintering in Croatia

Along with some close friend we are in the early stages of planning a winter caravaning trip to Dubrovnik. Planning to leave Feb 2014 and spending 3 months on the road. Would like to ski in Northern Europe on the way down and definitely stop in Venice for a few days. Rather than drive back the same way was considering taking the ferry from Dubrovnik to Bari and coming back via Italy. We are not in a rush so some details of places to visit on the way down would be welcome.

Has anyone out there done the trip or some of it. What should we consider before setting out and what is the availability of campsites like in the winter on our route down?
