Winter stops in France heading to Spain

We are travelling from Dunkerque through France to Valencia in January 2013. What is the best route avoiding Paris? Have been thinking about going via Rouen, Chartres, Orlean, Clermont-Ferrand, Perpignan.

Any ideas for overnight stops would be great.
