Touring France

My better half and I are planning to visit the Med coast this year. As its quite a long trip we wanted to break the journey which will be from Caen to the Montpellier. Advice on any camp sites that would be worth staying at on the way down would be welcome, and given that we will not be in a hurry is it worth the expense of using toll roads?
