I doubt if there are any sites open around Metz, but if you change your route and go instead via Troyes then Camping les Hauts Frenes is usually open. It’s a short way south west of Troyes at Eaux Puiseaux - about 250 miles from Calais. It’s listed by ACSI in their Great Little Campsites section and has its own website.
The Alan Rogers website - owned by this Club - has a list of 120 other French sites open all year, but misses that one near Troyes.

You could try the UKCampsites website. You can search Continental sites along with the filter system for open all year.

This campsite is just past Metz not far off motorway. Small municipal type. Used to be open all year but I'm not sure if it's still open in winter. Best ringing to find out.

fwiw …
Have found on our winter through France journeys that an ACSI Camping Card website campsite search filtering to ‘open all year’ etc usually produces lots of options way beyond the ARodgers & CMHC etc limited offerings.
Strongly suggest direct phone contact prior as listings change or alter or just close up some years.
Found the key feature is sites with live in bungalows usually stay open. Lots to go at but not easy to track down.
