Additional adults or total

You have to book for 2 adults.  The "price + 1" is just indicative of what the minimum price might be (and very rarely obtainable! )

The guide price used to be stated for pitch + 2 adults but the current way makes site fees appear cheaper - which they’re not. 😁

And that price is often only available on one day in the year!

And on some sites there is only one pitch at that price

Yes, the grass economy pitch, with no EHU.

And if the ground is too wet for grass pitches to be in use, that will not be available either.

And when you book for one does it cost you the price stated in the book.

 Very rarely I would think, as that is a "from" price!

One and One make 2 - not often that happens on some of this forum's threads! 

But yes, very often when we were working, if we were having a weekend away I'd go up on a Thursday evening to set up and then go to work the following morning. Just booked for 1 adult for the whole session then paid extra for whichever nights Mrs M joined the party.
