Job Title: Chef - Seacroft
Responsible to: Site Manager

Purpose of the Job: To effectively work alongside the kitchen team to achieve the highest standard of food production. To assist with the management of the food cost in line with the budget, source ingredients in accordance with the Club's sourcing policy and control production and portions in line with agreed specifications. To ensure that we are delivering great guest service with a team that is engaged and trained.

Responsibilities:

  • To produce meals in accordance with the current menu ensuring that it is delivered to members to a specified high standard.
  • To be aware of and understand the Club policy in respect of sourcing ingredients and ensure all team members understand and employ these policies consistently.
  • To work with the kitchen team to develop menus and offers which reflect guests demand and support the brand of the F&B operation across the site network.
  • To prepare a 'Daily Special' dish in addition to the menu, to make use of surplus ingredients/stock and reduce food wastage.
  • Through the effective use of due diligence paperwork, ensure that all relevant control procedures are in place to deliver accurate production records and effective waste management.
  • To assist with the control of the agreed food cost targets in line with the agreed budget.
  • To support with maintaining stock levels to agreed levels, taking stock once a week as a minimum.
  • Record and maintain accurate pricing data for all commodities, if price increases to make line manager aware.
  • Ensure you work in respect of health and safety in the workplace (including COSHH and Natasha's Law) and have the minimum qualifications and training to work in a food service environment, including complying with personal hygiene and uniform.
  • To ensure that the relevant food hygiene management system is in place and fully understood by the team, including operational cleaning rotas throughout the food production and service areas.
  • To attend all necessary training as required for your role to develop your own potential and enable your progress in the company.
  • To actively seek out guest comments and feedback in respect of the service using through face to face contact during service times.
  • Support all members of the team with the necessary skills and knowledge to enable them to do their job successfully.
  • To apply a consistent approach to all Club policies, procedures and rules in a fair and flexible manner in accordance with the requirements of the Complex.
  • To maintain an effective and friendly working relationship with colleagues to promote a constructive working environment, both at the Complex and at East Grinstead.
  • To undertake any additional tasks as required to ensure the smooth running of the Complex.
  • Responsible for managing rotas for staff in the kitchen.
