Pork fillet, sliced into medallions. Saute in a bit of oil for 4 mins. Turn pork over, then add some sliced mushrooms. Cook for another 4 mins. Add a tablespoon of brandy, then cook for a couple more mins. Stir in some single cream and a teaspooon or so of wholegrain mustard. Season with salt and black pepper. Heat through, then serve with new potatoes and veg of your choice.
Very easy, very tasty and you should be able to get all ingredients between Morrisons and the farm shop
