Not closing the fridge door firmly enough can set off an audible alarm.Another possibility,albeit unlikely in the UK,is low voltage.Our fridge began "beeping" at Beaulieu sur Dordogne due to voltage drop issues on the site supply.We had to switch to gas while the site sorted their power issues out.An outside chance issue in the UK but you never know....

The problem lies with the wires and plug into the rear of the lamp unit becoming coated with condensation, which activates the door open warning system - 30 beeps for 20 seconds repeating every 2min 40sec.
For some reason not using the lock helps to alleviate the situation in some cases.
The "cure" is to pull off the plastic cover over the lamp unit, dry the wires and plug, and all will be well - until the next time .
If desperate dry the lock / light with a hair drier, but don't over heat the food in the fridge.
The poor performance of the fridge / freezer in hot conditions is a different problem best mitigated by a fan.

our caravan fridge is a Thetford tall fridge freezer. The travel lock on it is a hook arrangement that pulls on a peg at the bottom of the door. In theory, when unlocked, it should clear the door, but in practice we find that the door does not always close properly & it's best to remove the plastic 'hook' completely while on site. Is this the type of thing LLM is talking about?

Using the door lock or not made no difference in my case.

No idea about an overheat alarm. However, I thought the door open beep on our Dometic tall fridge freezer was on a timer. No loss of temperature or anything, just time. I based that on the fact if you close ours and open it again it stops until it has been open another minute or so.
